Zeal Center is hosting a summer food truck lunch event on July 18, which will be filled with three amazing trucks and giveaways (view those here).

Q: What inspired you to start a food truck business?
A: I found that I like to cook. 

Q: What is the story behind your truck name or theme?
A: I had a restaurant back in my native country of Lebanon with the same name. 

Q: Do you have a culinary or food industry background?
A: Yes, I’ve operated many restaurants!

Q: Who makes up your team? How do they add to the operations or experience of the truck?
A: I’m the boss.

Q: What are your favorite serving spots around Sioux Falls and favorite marquee events?
A: KSFY Fridays on the Plaza Events and DTSF Block Parties

Q: How many customers/meals can you serve in an hour on your busiest day?
A: More than 100.

Q: What is next in the future of the food truck industry?
A: We’re currently seeking a physical location restaurant location with the turn key equipment we need.

Q: If you were in a drag race in your truck, what would it reach maximum speed at? ?
A: 80 miles per hour would max out the truck!

Kabab King features the cooking of owner Moe Fares and his son, Firas, who originally are from Lebanon. They make kabab and gyros with a combination of lamb and beef, shawarma with chicken or beef, and falafel. All their meals come as sandwiches or as platters with rice, salad, hummus and flatbread. Berkes BBQ – Owner, Scott Berke

Q: What inspired you to start a food truck business?
A: I wanted to work for myself and have a business in which my kids could participate.

Q: What is the story behind your truck name or theme?
A: My wife, my mom and dad, my brothers, nephew, and my kids all helped me start and run the business so I named it Berkes plural for all of them.

Q: Do you have a culinary or food industry background?
A: I worked at McDonald’s in the 80s.

Q: Who makes up your team? How do they add to the operations or experience of the truck?
A: It is my family and a few friends. My mom is my primary helper and when in town and my three kids do most of the work. My kids are becoming food truck experts very quickly!

Q: What are your favorite serving spots around Sioux Falls and favorite marquee events?
A: The only event I do is Food Truck Tuesday at Golf Addiction. I have a routine of businesses that I stick to in rotation year round.

Q: How many customers/meals can you serve in an hour on your busiest day?
A: Our most in one hour out the window is 130. Buffet style catering can serve many more.

Q: What is next in the future of the food truck industry?
A: For us, we are considering a brick and mortar location in the near future.

Q: If you were in a drag race in your truck, what would it reach maximum speed at? ?
A: I have hit 80 hauling my beast of a trailer down the hill by Chamberlain, but I have learned to not go over 60 or all the shelves will be empty when I stop!

Breaking Burrito – Owner, Charly Salgado

Q: What inspired you to start a food truck business?
A: Cooking is my passion I love to cook and I’ve been working in the food industry for very long time and in 2018 I decided to open my own business.

Q: What is the story behind your truck name or theme?
A: Haha well, my wife and I we love the show Breaking Bad and we used that as inspiration ending up with this name BREAKING BURRITO!

Q: Do you have a culinary or food industry background?
A: Yes, over twenty-five years!

Q: Who makes up your team? How do they add to the operations or experience of the truck?
A: Alonso (cook,prep) Clarissa (prep and cleaning) Lili (prep line) Ashley (cashier and designer) Angie (cashier) all make up the wonderful team.

Q: What are your favorite serving spots around Sioux Falls and favorite marquee events?
A: We love them all and love exploring new spots around Sioux Falls.

Q: How many customers/meals can you serve in an hour on your busiest day?
A: Wow I have no idea, but we’re really fast!

Q: What is next in the future of the food truck industry?
A: I don’t know as of right now, but an increase in overall food quality is my guess.

Q: If you were in a drag race in your truck, what would it reach maximum speed at? ?
A: Hahaha my truck isn’t winning many races and can only reach about 60 mps!
